We make the Jamaican Jerk Chicken Man! I’ve made this recipe numerous times, and every time it’s delicious. This is traditionally made with Scotch Bonnet peppers which are native to Jamaica. Habaneros are a close cousin, and are used in the U.S. because Scotch Bonnet’s are hard to find. I touched my eyes one time right after removing the seed from the Habaneros, and it felt like I pepper sprayed myself. This recipe is a variation of the great Thomas Keller, who owns the renowned “French Laundry” restaurant, in the Napa Valley wine region. I don’t know why, but I always come back to these regularly. I think it’s because the recipe calls for egg whites, so subconsciously, I think I’m being healthy! Ingredients: 1 cup packed brown sugar 1/4 cup butter, melted 1/4 cup egg whites (about 4 egg whites) 2 teaspoons vanilla extract 1 cup all-purpose flour 1/2 teaspoon baking powder 1/8 teaspoon salt Cooking spray 3 heath bars chopped Method: Preheat oven to 350°. It involves marinating the steaks in red wine, but the most important technique is basting the steaks with butter during the cooking process. There’s something I want you to understand though.
